We started picking the Viosinho variety in the third week of August and the Arinto variety three days later. All grapes were handpicked into small crates of 17kg and then taken to the winery, where they remained in the refrigerating chambers until the following morning. Viosinho grapes were selected on the sorting tables, destemmed and then pressed. Afterwards, they were fermented in new and used French oak barrels. The Arinto grapes were similarly sorted on the tables, slightly destemmed and then macerated with skins on over 24 hours before being pressed. The wine then fermented in stainless-steel vats up until almost the end of the process, before being transferred to new and used barrels, where it finished fermenting. Both wines aged in barrels. The final blend was produced in November the year after the harvest – the first ever blend of Quinta da Boavista white wine.
